This is a full-bodied white wine, a blend of Chardonnay and Nebbiolo, with the Nebbiolo vinified off the skins, as a white wine. The fermentation occurs solely in wooden vats, employing wild, native yeasts that lasts approximately ten days. Following this, the wine matures in a neutral oak barrel for about two years.
Sweet floral notes give the bouquet lovely breadth. It's an intriguing Piedmontese dry white with pretty aromatics, lovely orchard fruit character and fine balance, with a distinct kick of Nebbiolo structure that frames the finish. I know of no other wine like it and strikes me as best suited to starters and lighter fare.
