Just two 300 litre barrels were produced of this wine. It embodies aromas of white stone fruit and hints of citrus with a floral accent. A complex and layered wine with a saline finish. Low yields, Palomino bush-vines were planted in a field blend alongside Grenache Noir vines, every 10th vine. Minimal intervention winemaking is key to showcase the characters of this reserved cultivar. Hand harvested, destemmed and allowed 24 hours of skin contact prior to pressing. Underwent wild ferment in old French oak barrels. Barrel ageing on the fine lees for 8 months adds texture and mid pallet weight.
