Sancerre Rose, Pascal Jolivet

Made with 100% Pinot Noir, this wine is a blend of pressed juice and “saignée” methods. The juice is then fermented in stainless steel using wild yeasts, at 16°C for 19 days. After fermentation, the wine spends a further two months maturing in stainless steel before bottling. All parcels are vinified separately and are blended just before bottling.

Pale salmon pink in colour with a subtle nose of fresh berries. On the palate the wine is delicate and elegant with layers of herbals notes, berry fruits and strawberries with a clean, crisp finish.

The ideal aperitif, or as an accompaniment with tuna, salmon, pork dishes and poultry.
