However, the reaction of unplanned song, upon taking a sip of this appassimento method Primitivo, is the correct one. The wonderful heady Primitivo grapes grown in Puglia are dried over winter, in exactly the same way Amarone is made, giving this wine extraordinary ripeness, power and concentration of flavours. The mouth feel is big and intense, yet round, rich, warm and extremely well-balanced. It displays complex and mouth-filling layers of soft, elegant tannins, with hints of black forest fruit, vanilla, prunes, raisins, coffee and honey. “MIREA… I’ll never stop saying… MIREA!”
