L’Insolite Chenin is from a plot of vines some 85 years old, grown on clayey-limestone with sandstone and flint subsoil. The grapes are harvested in several picking sessions according to ripeness, with the last pass collecting grapes with noble rot. The grapes are aged on fine lees for 12 months with batonnage.
The nose is rich and enticing, with pears, pineapple and honey. The palate has a marked vitality, with perfect balancing acidity. After a couple of hours in a carafe, this will pair with lobster in a rich sauce or even Chinese fish dishes loaded with ginger.
