Domaine Thibert is situated in the village of Fuisse and is run by Christophe Thibert, assisted by wife Catherine and sister Sandrine who studied winemaking in New Zealand. There are 17 hectares in total, all farmed along organic lines, and their holdings include some superb parcels in Saint-Veran, Macon and Pouilly-Fuisse. This delicious old-vine Pouilly is aged in foudres (70%), the rest in small oak barrels. Round and elegant, this is a particularly good accompaniment to chicken.
A lemon-yellow in colour with green fruit aromas of melon, green apple and pear with a hint of butter from the oak. Medium-bodied on the palate with further floral notes and an elegant mineral backbone. The finish is lingering with notes of lime. Great food wine! Good with fricassee of veal kidneys with snails and herb butter, grilled poussin with garlic and limes or a chunk of tangy goat's cheese.
This cuvee is an assemblage from several plots in varied terroirs. On average, the vines are 75 years old. The quality of the grapes on these old vines explains the vibrant intensity of this wine. The bouquet is deep, pure and discreet. These old vines create a wine that is full-bodied, solid, dense and long-lasting wine, sustained by a delicate mineral bitterness.
