The Carillon family can trace their winemaking roots in Puligny back to the 16th Century. Until very recently the domaine was known as Louis Carillon, but in 2010 this was split between sons Jacques and Francois. As is the family way, Jacques continues to work in a near-organic fashion, avoiding chemicals and carrying out all work in the vineyard by hand. The style is classic and understated and his wines move quite seamlessly in line with his family tradition of creating age-worthy wines which reflect the character of the land. The average age of these vines is 35 years. 15% new oak is used and the wines are racked into stainless steel for an additional six months before being bottled with a delicate fining and light filtration.
